Ingredients

Directions

  1. Grind the walnuts with the milk to a coarse paste - you want a little texture, not a purée.

  2. Cook the sugar with a quarter cup of water in a heavy pan until it dissolves completely.

  3. Add the walnut paste and cook on a low flame, stirring continuously.

  4. Add the ghee a tablespoon at a time, letting each addition absorb.

  5. Stir in the crushed cardamom.

  6. Keep stirring until the mixture thickens, darkens and leaves the sides of the pan.

  7. Spread in a ghee-greased tray, cool, and cut into squares.

Made with Walnut (வாதுமை) — what it is, what it is called in Tamil, Kannada, Malayalam and Telugu, and how it is used in South Indian cooking.
